Just over an inch so far (over the last week) but Sherston Musul Primary School are confident that the rains have now started. The water tanks you helped to fund are already more than half full - including the new Musul tank - new gutters are working and we have only have one leak. Since then I have spent several weeks living with the local Maasai community based at Musul, a beautiful conservation area with resident leopards, eland, migratory elephants and stunning views of Mount Kenya in the distance. Whilst I was there during December 2006 the women of the community were introduced to the use of Cooking baskets as a means of helping to save firewood and water.&lt;br /&gt;&lt;br /&gt;This week I received the following heart-wrenching request for help from Daniel LeMolo on behalf of the community at Musul -&lt;br /&gt;&lt;br /&gt;&lt;em&gt;&lt;strong&gt;"We are continuing struggling with the drought here with no rain at all...The situation at Musul is worst ever seen. No water, no food, children fainting in the class and a lot of problems. So, to your website, if people can donate so that we can try to feed these kids so we don't lose them to hunger. Cover and cook gently for 2 to 3 minutes, stirring occasionally.&lt;br /&gt;3) Add water, stock cube, herbs, lentils. 4 months in Kenya, I'll hopefully have a little more time and opportunity to try and broaden the information available here at 'Cooking in a Basket' to include your own experiences of using a Cooking Basket or haybox technology - both in Kenya &amp; UK as well as other parts of the world.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I recently stumbled on a &lt;a href="http://rach-intricate-simplicity.blogspot.com/2007/03/cat-in-hat-comes-back_13.html"&gt;blog&lt;/a&gt; by a craft-talented lady in New Zealand called Rach who found us here at 'Cooking in a Basket' for the first time in February and she is now developing her own travel version of a cooking basket or cooking bag for backpackers...A large outer bag with a smaller 'draw-string' bag inside to hold the pot. She suggests using spare clothes to provide the stuffing in between. It's a great idea &amp;amp; good to read of her enthusiasm. A few people who had left comments on her blog had successfully tried cooking rice for themselves, which is great. Her recipes also look good and I'm looking forward to trying out some of these, too.&lt;br /&gt;&lt;br /&gt;Out of interest, an elderly friend up here at home in Shetland, UK, recently told me that people used to use Cooking Baskets or hay boxes to make beer in times gone by, as well as for cooking regular meals. So, if you are cooking for just one or two people then the 'pot dividers' (sorry, I don't know their proper name) mean you can cook more than one thing at a time (eg. stew in one, potatoes or rice in another &amp; veg in the third). In Kenya, for example, each back-load of firewood collected by women and young girls, whether in a rain forest or semi-arid area, will only last on average for about 4 days-worth of cooking. 1 large log of wood like the one in this photo only lasts for approx 1 hour. The staple meal of Githere (beans and maize) usually takes around 4 to 5 hours to cook each day, therefore needing around 5 or 6 logs. Simply by soaking the beans and maize the night before and then using a Cooking Basket to help cook them, the Githere will only need 30 minutes of boiling time instead of 4 to 5 hours...In this way, only 1 or 2 logs are needed instead of the usual 5 or 6. You can use beef or goat if lamb is unavailable)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#000000;"&gt;Ingredients:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#000000;"&gt;For the stew&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="color:#000000;"&gt;2 lb (900g) stewing lamb, trimmed of fat &amp; cut into cubes&lt;/span&gt;&lt;br /&gt;2 tablespoons plain flour&lt;br /&gt;salt and freshly ground black pepper&lt;br /&gt;2 large onions&lt;br /&gt;1/2 lb (225g) potatoes cut into cubes&lt;br /&gt;1 large carrot, peeled and cut into rings,&lt;br /&gt;1 small swede (orange turnip) peeled and cut into cubes,&lt;br /&gt;1 tablespoon of pearl barley (soaked overnight)&lt;br /&gt;1/2 teaspoon mixed dried herbs&lt;br /&gt;1 3/4 cups (14 fluid oz) water&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;For the dumplings&lt;/strong&gt;&lt;br /&gt;2 oz (50g) shredded suet&lt;br /&gt;4 oz (100g) self-raising flour&lt;br /&gt;1 tablespoon of fresh parsley, chopped&lt;br /&gt;salt &amp;amp; TEXT-ALIGN: center" align="center"&gt;&lt;/p&gt;&lt;/span&gt;&lt;p&gt;&lt;/p&gt;&lt;span style="color:black;"&gt;&lt;span style="COLOR: rgb(0,0,0)"&gt;NB. &lt;em&gt;Choose a container that is large enough to contain your cooking pot once the container has been thickly padded. A basket&lt;span style="COLOR: rgb(153,0,0)"&gt; &lt;/span&gt;container can be made from sturdy material, or sisal, or reeds, or willow, etc. In fact, the basket can be as simple or as fancy as you like, such as the ones shown here in the photographs&lt;/em&gt;. &lt;span style="FONT-STYLE: italic"&gt;If you are making a hay sack, make sure that any tears in in the sack are sewn closed first. An extra piece of material is also useful to wrap the hot cooking pot when you are transferring it and out of the Cooking Basket or Hay Sack.. This extra piece of material also helps to protect the inside of the sack or basket from the sooty-bottom of your pot (the piece of material is easier to clean than the basket or the sack itself&lt;/em&gt;)&lt;/span&gt;&lt;span style="color:black;"&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/p&gt;&lt;h4&gt;&lt;span style="color:black;"&gt;&lt;span style="FONT-STYLE: italic"&gt;&lt;span style="COLOR: rgb(153,0,0)"&gt;Constructing your Cooking Basket or Hay Sack&lt;/span&gt;&lt;/span&gt;&lt;/span&gt;&lt;/h4&gt;&lt;ol&gt;&lt;li&gt;&lt;h4&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;&lt;span style="font-size:85%;"&gt;Make a 'nest' inside the basket or sack or box by thickly padding the bottom and sides with clean dry stuffing material (see above). The padding should be firm and about 4 inches thick (the widest part of your hand) all around the nest.&lt;o:p&gt;&lt;/o:p&gt;&lt;/span&gt;&lt;/span&gt;&lt;/h4&gt;&lt;/li&gt;&lt;li&gt;&lt;div class="MsoNormal" style="MARGIN: 14pt 0in 14pt 0.5in; COLOR: rgb(0,153,0); TEXT-INDENT: -0.25in"&gt;When you have done this line the inside of the 'nest' with the sheet of plastic and trim the plastic to fit neatly. &lt;/div&gt;&lt;/li&gt;&lt;li&gt;&lt;div class="MsoNormal" style="MARGIN: 14pt 0in 14pt 0.5in; COLOR: rgb(0,153,0); TEXT-INDENT: -0.25in"&gt;If you are making a Cooking Basket, now make a final lining for the 'nest' using a piece of the material. Cut the material to the size that you need then neatly sew the material so that it holds the plastic and the stuffing material firmly in place. (It is not necessary to use material to line your Hay Sack or Hay Box).&lt;o:p&gt;&lt;/o:p&gt;&lt;/div&gt;&lt;/li&gt;&lt;li&gt;&lt;div class="MsoNormal" style="MARGIN: 14pt 0in 14pt 0.5in; TEXT-INDENT: -0.25in"&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;Finally, make a cushion to cover the top of your Cooking Basket or Hay Sack or Hay Box. Make the cushion using another piece of the lining material or another piece of sack. Now firmly pad the cushion with the stuffing material&lt;/span&gt;&lt;b style="COLOR: rgb(0,153,0)"&gt; &lt;/b&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;so that the cushion is also about 4 inches (the width of a hand) thick. using the heat of the food &amp;amp;/or liquid inside it. &lt;/span&gt;&lt;/span&gt;&lt;?xml:namespace prefix = o /&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoNormal"&gt;&lt;b&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/b&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;b style="COLOR: rgb(0,153,0)"&gt;When using a Cooking Basket&lt;/b&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;,&lt;/span&gt; you begin cooking your food on your normal cooking fire, stove or jiko in the usual way (but for a much shorter time than usual) and then you place the saucepan (sufria) containing the boiling hot food into the Cooking Basket for the cooking process to finish. If used well, the Cooking Basket can help to save 50% to 70% of the fuel that is usually needed for cooking. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;br /&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;The Cooking Basket can also reduce the amount of water&lt;/span&gt; that is needed for cooking, too, especially beans, peas &amp;amp; lentils which need a long time &amp;amp; a lot of water to cook on the normal fire or cooking stove. These can be cooked using the cooking basket before adding them to other ingredients such as a soup, stew or Githere, but remember that the beans must be boiled on your usual fire or stove for at least 15 to 30 minutes first in order to make them safe to eat.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;br /&gt;It's even possible to use the Cooking basket to cook vegetable &amp;amp; meat stews. Just bring the food to a boil on your normal fire or cooking stove, then make sure the lid is securely on the cooking pot, carefully wrap the pot in the cloth and place the pot inside the Cooking Basket. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;br /&gt;As soon as you have done this, cover the pot &amp;amp; the top of the basket with the padded cushion provided - making sure that you don’t leave any gaps. The Cooking Basket will then hold the heat in the food so that it will continue cooking without using extra fuel. The basket also helps to keep hot food warm for up to 6 hours.&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;b&gt;&lt;span style="COLOR: rgb(153,0,0)"&gt;The following are some suggested cooking times for when using a Cooking Basket along with your normal stove.&lt;/span&gt; &lt;o:p&gt;&lt;/o:p&gt;&lt;/b&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;b&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;Rice&lt;/span&gt; &lt;/b&gt;(when cooked on its own): 5 mins boiling time, then 30 to 40 mins in basket &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;&lt;b&gt;Potatoes&lt;/b&gt;&lt;/span&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt; &lt;/span&gt;(1 inch cubes): 5 mins boiling time, then 1 hour in basket&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;&lt;b&gt;Potatoes&lt;/b&gt;&lt;/span&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt; &lt;/span&gt;(whole or halved): 10 mins boiling time, then 1 to 2 hours in basket &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="PreformattedText"&gt;&lt;span style="COLOR: rgb(0,153,0)"&gt;&lt;b&gt;Mixed vegetable soup or stew:&lt;/b&gt;&lt;/span&gt; &lt;/span&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/p&gt;&lt;p class="MsoNormal" style="TEXT-ALIGN: left"&gt;(makes 4 or 5 medium-sized bowls of soup/stew. )&lt;?xml:namespace prefix = o /&gt;&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;&lt;u&gt;Ingredients&lt;o:p&gt;&lt;/o:p&gt;&lt;/u&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 medium-sized Irish or sweet potato, peeled &amp; cut into 1 inch cubes &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 carrot, peeled &amp;amp; cut into rings, &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 medium sized onion, peeled &amp; chopped, &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 tomato, chopped&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 large spoonful of mchuzi (OYO) mix (or 1 stock cube, or curry powder)&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 litre water (you can add more water if you want, to make it more like a soup)&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;Salt to taste, &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1 large spoonful of oil.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;You can also add any of the following: cooked beans, maize, or peas; chopped sukuma wiki (spinach or kale), cabbage, grated coconut, chopped banana or plantain, or even a spoonful of peanut butter to add extra goodness &amp; flavour. Half a cup of washed, uncooked rice (or pasta if you prefer)&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;If you want to use meat, ¼ or a ½ kg boneless lamb, goat or beef, cut into small cubes can be used. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;&lt;b&gt;&lt;u&gt;What to do&lt;o:p&gt;&lt;/o:p&gt;&lt;/u&gt;&lt;/b&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;1) Place the oil in a metal cooking pot (sufria) &amp;amp; heat gently on the stove or fire. (If possible use a cooking pot/saucepan without a long handle). &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;2) Put in the chopped onions &amp; cook them in the hot oil until they are soft. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;3) If you wish to use meat then add it now. Stir it carefully with the onions &amp;amp; oil for 5 mins to 10 mins until the meat has gone brown on the outside&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;4) Then add the chopped carrot &amp; potato &amp;amp; stir everything together —do this with the sufria on the heat of the fire or stove for about two or three minutes. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;5) Add the chopped tomato &amp; sukuma wiki (spinach or cabbage), &amp;amp; any other vegetables that you would like to use, &amp; stir these together well. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;6) Then add the water to the cooking pot &amp;amp; cover with a lid.&lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;7) Raise the heat on the fire or stove &amp; bring the stew to the boil. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;8) When the stew starts to boil, remove the lid &amp;amp; add the uncooked rice or pasta &amp; stir once or twice to stop it sticking. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;9) Now add Mchuzi mix (OYO, or stock cube) or curry powder &amp;amp; stir once or twice to mix. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;10) Put the lid back on top of the sufria and leave the stew to cook on the fire or stove for a further 10 minutes. Finally, stir it one more time. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;11) Carefully remove the hot cooking pot from the fire or stove, wrap it in the cloth provided and place it inside the cooking basket (making sure that its lid is still properly). &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;12) Now carefully place the padded cushion on top of the cooking pot – making sure that there are no gaps for the heat to escape. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;13) Leave the stew in the cooking basket for a minimum of 1 &amp;amp; half to 2 hours. &lt;o:p&gt;&lt;/o:p&gt;&lt;/p&gt;&lt;p class="MsoBodyText"&gt;14) After this the stew is cooked and ready to eat. So potentially every house&lt;a href="http://2.bp.blogspot.com/_HN67LCLnBwM/RaSohFwjujI/AAAAAAAAAA4/AvrM2Ypg8T4/s1600-h/Fancy+Cooking+Basket.JPG"&gt;&lt;img id="BLOGGER_PHOTO_ID_5018321171232569906" style="FLOAT: left; MARGIN: 0px 10px 10px 0px; CURSOR: hand" height="260" alt="" src="http://2.bp.blogspot.com/_HN67LCLnBwM/RaSohFwjujI/AAAAAAAAAA4/AvrM2Ypg8T4/s320/Fancy+Cooking+Basket.JPG" width="202" border="0" /&gt;&lt;/a&gt;hold around the world could have one. &lt;/p&gt;&lt;p class="MsoNormal"&gt;The basket itself can be anything from a simple rice sack or sisal basket to something more fancy such as the one shown in the photo - it just needs to be able to provide a container for your cooking pot. &lt;/p&gt;&lt;p class="MsoNormal"&gt;Padding for the basket can be made using dried hay or banana leaves, or warm woollen blanket material, or pillow or duvet stuffing. The padding used to make the 'nest-type' lining for the basket needs to be at least the width of a hand (at least 4 inches) thick. The padded 'nest'&lt;span style="font-size:0;"&gt; &lt;/span&gt;is then lined with a strong plastic sheet or large plastic bag. A piece of&lt;span style="font-size:0;"&gt; &lt;/span&gt;material can then be sewn as a lining, to hold the padding and plastic sheet in place. &lt;/p&gt;&lt;p class="MsoNormal"&gt;The size of the Cooking Basket&lt;span style="font-size:0;"&gt; &lt;/span&gt;can be made small, medium or large, depending upon the size of the cooking pot that it needs to hold. Once you have made the padded basket itself, you also need to make a padded cushion to cover the top of the basket. This also needs to be at least the width of a hand (ca 4 inches) thick and should be made using the same padding material as the basket. &lt;/p&gt;&lt;p class="MsoNormal"&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="color:#cc0000;"&gt;&lt;strong&gt;For further information on how to make and use a cooking basket please also see&lt;/strong&gt;&lt;/span&gt;
