Cooking Basket Recipe for Sausage and Bean Risotto

Serves 2 to 4

Ingredients:
1 medium onion, peeled and roughly chopped
1 large carrot, peeled and cut into rings
4 beef or pork sausages, roughly chopped
A small amount of smoked sausage, roughly chopped (optional)
Half a mug of cooked red kidney beans
Half a mug of rice, cleaned and washed
1 x 14oz tin of chopped tomatoes, or 4-6 fresh tomatoes, roughly chopped
2 tablespoons paprika
2 mugs of water (NB add an extra mug of water if you are using fresh tomatoes)
1 tablespoon vegetable oil
Salt to taste

Method:
Using a medium-sized saucepan, gently fry onions in the oil until softened
Add sausages and cook until browned all over
Add carrots, beans, tomatoes and paprika and stir until mixed well together
Add water and salt to taste
Bring to the boil, stirring occasionally to stop rice from sticking
Cover and boil for 10 mins
Remove saucepan from the stove or fire and place it in the Cooking Basket for about 1 1/2 hours.

If you wish, you can serve this with grated cheese on top.
